I’m going to eat lots of vegetables this year! The number one reason I don’t already do this is pure laziness. I mean really, how hard is it to pull a few stalks of celery out of the fridge and rinse them off? But that’s how it is. If it’s not readily available to eat then chances are good, it’s going to sit in the refrigerator until it’s too late and goes to waste. I have thought of a solution though-make it snack ready! Each week when I come home from the grocery store, I’m going to make it a habit to prepare my veggies so I can simply grab them from the fridge and chow down. Minimal effort required. That 10 minutes of preparation on Saturdays is going to change my eating habits! By the way, I found this storage tip on the package of celery itself!

Oh my gawd, this is genious! I gotta try this. I assume it works just as well for cut carots and such… I’m gettin ghungry just thinking about it ;)
