I wish green onions were available to purchase in small quantities like one or two at a time. I hate letting things go to waste and this week I used a recipe that only called for 2. So what to do with the rest of the package? Instead of letting them sit in the fridge and rot, I decided to chop and freeze them.
After rinsing, drying, and crying like a baby I dropped them into a plastic freezer jar that was labeled and dated. Into the freezer they went.
After a couple of hours I opened the container and poked at the onions with a spoon. They hadn’t frozen together into a solid cylinder, but they were a little stuck together. With a few spoon stabs, they broke apart easily. And I don’t think I dried them off well enough because the bottom half had some water crystals. Next time I’ll be sure to do a better job.
Now I need to find some recipes to try out that don’t require fresh green onions. I’ll be back sometime with how they fare!
