Peach Freezer Jam

The box of peaches we bought right before we decided to up and leave, survived our move and proved to be the perfect excuse to put off unpacking yesterday.  They were on the verge of over-ripeness and needed to be used up so I made a couple batches of freezer jam.

It’s quite a simple and quick process.  To get started, you will need to peel the peaches.  Save your fingers and see the tip below!

Then, slice them up and crush them with a potato masher.  Mix in some lemon juice and sugar. Let stand for 10 minutes.

Stir in the pectin and ladle into jars.  Let stand for 30 minutes then refrigerate/freeze.

Or enjoy the fruits of your labor right away!

Recipe for Peach Freezer Jam (makes 12 half pints)

 

5 Cups Prepared Peaches (about 10 peeled and crushed peaches)

2 Cups Sugar

6 Tbsp Ball RealFruit Instant Pectin

3 Tbsp Lemon Juice (1 lemon)

 

Directions:

1. Stir peaches, sugar and lemon juice in a bowl.  Let stand 10 minutes.

2. Add pectin gradually, stirring to prevent clumping.  Stir 3 minutes.

3. Ladle jam into clean jars and let stand 30 minutes.  Enjoy! (Refrigerate up to 3 weeks, or freeze up to 1 year)

We just made peach jam a couple of days ago, too. :)
I like the freezer option.. I chose one of the hottest days of summer resurgence here to stand over the stove & boiling water baths!
